About the Pizza Dough & Baker’s Percentage Calculator

Calculate a complete ingredient working from dough-ball yield or your chosen pan mass loading. Every baker percentage uses total flour as its denominator. Water, salt, selected-type yeast, oil and sugar remain explicit, and a poolish or biga is allocated from those same totals rather than counted twice. Editable recipe examples and yeast coefficients remain assumptions, not certification or a fermentation prediction.

How to use it

  1. Choose ball count/weight or enter pan dimensions and your own mass-per-area loading.
  2. Enter all baker percentages or apply an editable recipe example. Identify the yeast type used by your percentage.
  3. If using a preferment, supply its flour share, hydration and selected-type yeast rate; the final mix cannot become negative.
  4. For fresh/active-dry/instant conversion, enter product/reference coefficients and identify their source before exporting the complete current working.

Arithmetic and reference context

Total flour = target mass ×100 ÷ total recipe percentage. Each ingredient = total flour × its percentage/100. Preferment quantities are subtracted from the same ingredient totals. The AVPN regulations provide a direct-method reference; no AVPN certification, pan coefficient or preferment authority is inferred. The manufacturer conversion guidance is product-specific; use actual label/reference coefficients rather than a universal active-dry/instant ratio.

Limitations

  • Style presets are original editable working examples except the explicitly qualified AVPN-range reference. They are not guaranteed recipes or official style standards.
  • Pan loading is your supplied design choice, not a universal dough density.
  • Yeast products and activation instructions vary. Conversion arithmetic does not predict fermentation or replace product handling instructions.
  • A preferment cannot contain more water or yeast than the entire dough. No ingredient, ball-count or output row quota is imposed.

Frequently asked questions

What do I get without a pass?

Without a pass, Pizza Dough & Baker’s Percentage Calculator shows ingredient labels with complete gram allocations and exports hidden. Until you unlock it, the result can’t be downloaded or copied. A Pro, Premium or Ultimate pass, a one-time payment that never renews, unlocks the full result. The pricing page lists the passes and their prices.

Why do baker percentages add up to more than 100%?

Flour is the 100% denominator. Water and every other ingredient are expressed as a percentage of that flour, so their combined dough mass exceeds flour mass.

Is poolish or biga added on top of the recipe?

No. Its flour, water and selected-type yeast are allocated from the totals, leaving the exact remaining ingredients for the final mix.

Do the yeast conversions apply to every brand?

No. You provide and identify the product/reference coefficients. The calculator preserves those assumptions and does not invent universal equivalence.
